After the success with whole frozen plums my next experiment was sliced frozen plums. The method goes a little something like this:
- Wash and dry fully ripe plums.
- Cut each plum in half, remove stone then cut each half in half (so you have quarters).
- Arrange on tray covered in glad-wrap or baking paper so slices aren’t touching and put in freezer.
- Take out after an hour or two when plums are no longer sticky, put in airtight container or bag and put in freezer.
This is a pretty straightforward process but it does take a bit of time to slice and de-stone the plums. A few tips:
- Your hands will get messy.
- Don’t do this in good clothes; juicy plums can splatter.
- If you have a choice of plums freestone ones would be easier to handle.
- Don’t forget that you have a tray of plum slices sitting in the freezer…
I intend to use the plums preserved in this way for putting on top of winter breakfasts or for making desserts such as fruit crumbles. Yum! As with the whole frozen plums, they are supposed to keep for up to 6 months in the freezer.
